Part of my job is to improve the dining experience, that is both through increasing the quality of the menu and dishes servers, as well as the service provided. I am also a recruiter, and I work to bring talent to the resort to increase that experience.

We have already redesigned the experience at the Blue Lagoon and the Gourmet Restaurant, as well as Indochine. Increasing the quality of the food as well as the variety of the menu.

Also, I am evaluating and training the staff to provide an overall better dining experience. I look for people who love what they do, that bask in the moment of creation and can keep their head in the game. As I tell my cooks, our guests don’t see the person who cooked the food physically, they see them through what is put in front of them, and that they should take pride in that!

I met Cheif Manny on our resent trip Sept 1 2009 and he has greatly improved the menus and food quality. He is so interested in making sure things are right he walks through the various restaurants every evening to meet and greet the guest. The Azuel

The Azuel is the newest VIP members restaurant located on the 4th floor of the Tower

The Blue Lagoon

Specialty:   Caribbean Food

Located directly at the Lifestyle Hacienda Resorts private beach and facing beautiful Cofresi beach. Completely remodeled 2009

During daytime, starting at noon, the "Blue Lagoon" opens for light lunches and snacks. Fresh salads, satisfying burgers, sandwiches and even a delicious chicken or the catch of the day from the grill are available until 6:00pm.

In the evening, the "Blue Lagoon" is the perfect place for a truly Caribbean flair.  A varied menu, based on seafood, offers fresh fish and seafood prepared with a touch of Cajun flavor and fruits of the Caribbean. We highly recommend shrimps Al Fuego style (spicy) and sea-brass rolls infused with passion fruit.
You can also ask for our fish and seafood barbecue and other Creole specialties.

The Blue Lagoon's Signature Dish
Maple Glazed Shrimp and Scallop Brochettes

4 Jumbo peeled shrimps
4 Jumbo Scallops
3 Tablespoon Maple Syrup
1/4 cup olive oil
1 tablespoon minced garlic
2 teaspoons lemon juice
1/4 teaspoon pepper
1 pc of Organic onions, bell peppers and red peppers (cut in cubes)
Pinch of parsley, finely chopped


2 hours prior to grilling, prepare the marinade. Mix olive oil, lemon juice, pepper, parsley, maple syrup and garlic. Place marinade in large freezer bag.

Add the shrimps and scallops to the marinade and place bag in refrigerator until ready to grill.

Remove shrimp and scallops from marinade and discard the marinade. Place shrimp, scallops and vegetables on skewers.

Spray the grill lightly with cooking oil to prevent sticking. Add shrimp kebabs. Cook for about 4 minutes. Glaze the skewers with maple syrup before serving

Serve the kebabs over a bed of brown rice and garnish with balsamic glaze

Casablanca - Buffet Style Restaurant

Our International buffet style breakfast offers 18 different warm choices plus fruits and fresh seasonal juices, cereals and breads.  Try or request different combinations of fruit juices and milk shakes prepared at the Juice Bar. The Chef will be happy to personally prepare your favorite style egg breakfast with your choice of ingredients.

The noon buffet offers a large selection of salads, meats, vegetables and international dishes to choose from.  At the pasta corner you can order your favorite pasta with your favorite sauce cooked a la minute. Our chefs can also prepare delicious quarter pound hamburgers, fish, chicken or meats cooked to your taste. There is also a sandwich bar and wonderful array of delectable desserts.

We have 14 different international buffets where you can enjoy a gastronomical journey through France, Spain, Italy, Mexico, and not forgetting the exotic food of the Dominican Republic.
Each dish is prepared with the finest imported ingredients. Friday nights, Casablanca prepares its Gala Buffet which offers the most delicious selection of dishes, in a distinguished ambiance where you can enjoy and taste our creative cuisine.

Indochine's Signature Dishes
Tom Yum SoupWe are recently upgraded the Indochine menu adding new and exciting dishes that are being well received by our guests already!  One of our signature dishes, Tom yum soup, is made at your table (cooking and a show).
Tom yum soup is a kind of Thai soup that is known for its broth which is both savories spicy, and sour. In translation from its Thai name, tom yum is also sometimes spelled tom yam and dom yam. All three of these spellings, however, refer to the same dish. Tom Yam is very popular in Thailand and in Thai restaurants abroad. In fact, it is arguably one of the most popular Thai dishes worldwide.

Tom yum broth is made with fish sauce, galangal, shallots, lemon grass, lime leaves, lime juice, and tamarind. Crushed chilies are also added to the basic stock to give it its spiciness. It is also the chili that lends the characteristic deep orange color to the broth. A distinguishing characteristic of tom yum soup is the generous amount of herbs that are used in its creation. The soup is often topped with a small pile of fresh cilantro leaves, Straw or oyster mushroom, or both, are also a part of most tom yum soup recipes.

In addition to a tasty broth topped with fresh fragrant greens, tom yum soup also generally includes proteins. While some Thai restaurants in the West offer tom yum soup with tofu, this is not a traditional way of serving the dish. Rather, the common proteins added to tom yum broth are chicken, shrimp or prawns, fish, or a mix of seafood.

The International breakfast buffet caters 12 unique hot and cold specialties, including fresh fruits, and only the most delicious seasonal juices prepared just for you, along with any style of eggs with your favorite ingredients. All prepared for you in minutes.

From 12:00pm onward we offer an excellent lunch buffet which includes a wide variety of salads, meats, and international dishes. Our Chefs will cook for you delicious 1/4 pound hamburger, chicken, fish, meats or your favorite pasta, all within minutes. If you are in a light mood you may feel tempted by our special salad bar, offering a wide variety of exotic local vegetables.  Enjoy our ample variety of desserts to tantalize your taste buds.

Trapiche Paradise

The outstanding fusion of these two cultures has created the Trapiche Paradise  cuisine. Here you can find the famous Fajita, specially made with strips of beef, pork, chicken or seafood, combined with bell peppers, onions and tomatoes, all cooked on charcoal grill and infused with the tantalizing flavor of "Mesquite" (an aromatic desert tree). We also offer a wide variety of delicious Burritos, specially made with your choice of meat or seafood seasoned with only the best array of Mexican spices and sauces, all served on wheat-tacos.
We also recommend the grilled to perfection BBQ Pork  with a touch of guava flavor.

The V.I.P GOURMET - Member's Exclusive

Lifestyles members can enjoy this sophisticated a-la-carte restaurant, located at the V.I.P Court. 

  You may choose to dine "al fresco" at our open-air terrace or at the indoors intimacy. During the day, starting at noon, the V.I.P Gourmet opens for light lunches and snacks. Fresh salads, satisfying burgers, creative sandwiches and even a delicious chicken or the "catch of the day" from the grill are available until 6:00pm.

In the evening, the V.I.P Gourmet is the perfect setting for a perfect night.

Every evening, a varied six course theme menu offers the finest dishes from Europe, the Far East, to the Caribbean with a white-glove service. Dessert of course is flambé in front of you.
